With John's traditional baking skills and passion for great bread and pastry and Donna's organisational talents and desire for great customer service, the husband and wife team have managed to perfect a winning recipe with the Copenhagen Bakery.
After training as a baker and konditor in Kloster, a small town on Denmark's west coast, John immigrated to New Zealand to work for The Danish Bakery on a one-year contract. After meeting Donna and travelling together, they decided to head back to New Zealand, after which they opened the Copenhagen Bakery.
Not only catering to the kiwi taste, the bakery is also seen by Danish tourists as a home away from home with its selection of authentic goods. Providing the taste of Europe and Scandinavia, with a kiwi feel and flavour, has meant the thriving Copenhagen Bakery, in the heart of central Christchurch, is a mouth watering experience for its residents and visitors. “We are passionate about bread and pastry, and New Zealanders have a real appetite for European flavours – with a Kiwi twist,” says John.
John and Donna Thomsen's high level of service and style of presentation is paramount to their success and as a result, has seen them set up a café on the premises. Customers can now not only purchase a range of delectable goods, but can enjoy them over a great coffee whilst soaking in the wonderful atmosphere.
The Copenhagen Bakery has not only been a business success, but has also gained recognition for its tasty breads and sweet treats. John and Donna have collected numerous awards over the past 22 years. Awarded the New Zealand Baker of the Year in 2005, John continues to be awarded prizes for quality goods based on a blend of craftsmanship and the best-quality ingredients. Awards are proudly displayed throughout the shop and are reflection of their thriving business and well earned success.
